Steely Breakfast Cookie |
I know they say the most important meal of the day is breakfast and I do feel better when I take the time to eat something healthy with my morning coffee. The problem is I don't want to take the time to fix something. I want to grab something without any effort and not feel guilty about it. I've been looking online at Breakfast Cookie recipes but didn't find one that had a main ingredient of steel cut oats - those hardy good for you oats Oprah loves. This morning, after a bowl of cereal and my coffee, I decided to experiment a bit with my own creation. Keep in mind my Mom is the baker in my family. My cakes have been known to look more like sad old lumps than like the prize winning multi layered beauties my Mom can whip out, but I was inspired so I gave it a go.
To my surprise and pleasure they turned out rather good I think! They do fall apart easily, but I would rather that than be crunchy hard pucks and I didn't want to add flour. I figured I could freeze some and microwave them in the mornings. My feelings will not be hurt if you pass on this recipe, but if you do give it a try I think you'll like them too. Click

I make cookies with oatmeal and grated apples, no sugar for me, so I consider them health food, even if it does have a stick of butter in it, lol.

I can smell them from here! Dh's favorite cookies always have oatmeal!
